Ingredients:

Mac & Cheese

  • 12 oz. GoodWheat Elbows 
  • 4 Tbsp. unsalted butter
  • 4 Tbsp. all-purpose flour
  • 1 tsp. garlic powder 
  • 1/2 tsp. onion powder
  • 1/2 tsp. Paprika
  • 3 c. whole milk
  • 3 c/ sharp cheddar, grated
  • 1 Tbsp. Kosher salt
  • 1/2 tsp. black pepper
  • 2 tsp. black pepper
  • 8 oz. cooked bacon pieces, diced (optional)
  • 1/2 tsp. red pepper flakes (optional)

Breading

  • 1 c. all-purpose flour
  • 2 eggs
  • 2 c. panko breadcrumbs, toasted
  • 1 Tbsp. olive oil
  • 1/4 c. parsley, chopped
  • 1/4 c. Parmesan cheese 

How to Make:

Mac & Cheese

Step 1.

  • Melt butter in large pot over medium heat and then add flour. Cook for 5 minutes whisking constantly. 

Step 2.

  • Add garlic powder, onion powder and chili flakes then slowly whisk in whole milk. Simmer on medium-low heat for 10 minutes or until sauce thickens and raw flour taste is gone.  

Step 3.

  • Season with salt and freshly ground black pepper.  

Step 4.

  • Remove from heat and whisk in shredded sharp cheddar. 

Step 5. 

  • Cook macaroni according to packaging instructions until al dente. 

Step 6.

  • Drain the pasta and immediately add to the cheese sauce and stir to incorporate over low heat (Add in bacon, if desired). Pour into a baking dish, and chill.

Making the Bites

Step 7.

  • Once chilled, scoop into uniform balls, approximately ½ C each (50g), and place onto a parchment lined sheet tray. Freeze at least 2 hours, until set.

Step 8.

  • Preheat oven to 425F. Coat a baking sheet with olive oil.

Step 9.

  • Assemble a three-part breading system: a dish of flour, a dish of beaten eggs, and a dish of panko breadcrumbs.

Step 10.

  • Dredge slightly frozen bites in flour, then egg, then toasted panko.

Step 11.

  • Place on greased baking sheet and bake for 10 minutes at 425F. Flip and bake an additional 10 minutes. Garnish with chopped parsley and fresh Parmesan Cheese.
