- 12 oz GoodWheat Rotini Pasta, dry
- 8 oz Fresh mozzarella pearls
- 12 oz Cherry tomatoes
- 1/2 c. Fresh basil leaves
- 1/4 c. Extra virgin olive oil
- Balsamic glaze, to taste
- Salt and pepper, to taste
How to Make:
Bring a large pot of salted water to a boil. Cook the pasta according to the package directions until al dente. Drain the liquid, rinse the pasta and set aside.
Cut the cherry tomatoes in half. You may also cut the mozzarella pearls in half or keep them as is.
In a large mixing bowl, add the pasta, cherry tomatoes, mozzarella, fresh basil, extra virgin olive oil and balsamic glaze. Toss to coat and season with salt and pepper.
Tip: If making ahead, keep the dressing on the side until you’re ready to serve.
