Ingredients:
Green Goddess Dressing
- ½ c. Greek yogurt
- 1 Tbsp. Extra virgin olive oil
- ½ Tbsp. Capers
- ¼ c. Basil, leaves only
- 2 Tbsp. Dill, rough chopped
- 2 Scallions, chopped
- 2 Garlic cloves, rough chopped
- 2 Tbsp. Lemon juice
- 1 tsp. Kosher salt
- ¼ tsp. White pepper
Pasta Salad
- 6oz GoodWheat Rotini Pasta, dry
- 1 c. Cherry tomatoes, halved
- 1 c. Artichokes hearts, quartered, canned, drained, chopped
- 1 c. Red pepper, roasted, jarred, chopped
- 2 c. Arugula, fresh
- ¼ c. Basil, chopped
- 1 c. Mozzarella, fresh, mini balls
How to Make:
Step 1.
Cook rotini according to packaging instructions until al dente. Drain and rinse under cold water. Set aside.
Step 2.
In a blender, combine all ingredients for the green goddess dressing and blend until combined. Remove from the blender and set aside in a large bowl.
Step 3.
Add the cooked rotini pasta, cherry tomatoes, artichokes, roasted red peppers, arugula, basil and mozzarella balls into the large bowl and stir to combine.
