Ingredients:

Green Goddess Dressing

  • ½ c. Greek yogurt                            
  • 1 Tbsp. Extra virgin olive oil                        
  • ½ Tbsp. Capers                 
  • ¼ c. Basil, leaves only                     
  • 2 Tbsp. Dill, rough chopped                         
  • 2 Scallions, chopped                       
  • 2 Garlic cloves, rough chopped                  
  • 2 Tbsp. Lemon juice                       
  • 1 tsp. Kosher salt             
  • ¼ tsp. White pepper        

Pasta Salad

  • 6oz GoodWheat Rotini Pasta, dry                             
  • 1 c. Cherry tomatoes, halved                      
  • 1 c. Artichokes hearts, quartered, canned, drained, chopped                        
  • 1 c. Red pepper, roasted, jarred, chopped                            
  • 2 c. Arugula, fresh                           
  • ¼ c. Basil, chopped                         
  • 1 c. Mozzarella, fresh, mini balls                

How to Make:

Step 1.

Cook rotini according to packaging instructions until al dente. Drain and rinse under cold water. Set aside.

Step 2.

In a blender, combine all ingredients for the green goddess dressing and blend until combined. Remove from the blender and set aside in a large bowl.

Step 3.

Add the cooked rotini pasta, cherry tomatoes, artichokes, roasted red peppers, arugula, basil and mozzarella balls into the large bowl and stir to combine.
