One Pot Broccoli Cheddar Rotini
Ingredients:
- 12oz GoodWheat Rotini
- 1 Tbsp. Olive oil
- 1 Yellow onion, diced
- 4 Garlic cloves, minced
- 1 1/2 c. Vegetable broth, unsalted
- 1 c. Low-fat milk
- 2 tsp. Kosher salt
- 2 tsp. Black pepper
- 2 Broccoli heads, cut into small pieces
- 1/2 c. Cheddar cheese, shredded
How to Make:
Step 1.
In a large pot over medium heat, heat oil. Add in onions and cook until soft and tender, roughly 6 minutes. Add garlic and cook until aromatic, roughly 30 seconds.
Step 2.
Add in GoodWheat Rotini pasta, vegetable stock, and low-fat milk, and stir to combine. Season with kosher salt and black pepper. Bring to a boil, and reduce the heat to a simmer, stirring occasionally. Add in broccoli. Cook the pasta until it is al dente, roughly 10 minutes. At this point, the broccoli should be cooked and is incorporating into the sauce.
Step 3.
Stir in cheddar cheese until melted. Enjoy!
