Tuscan White Bean Pasta
Ingredients:
- 12oz GoodWheat Penne
- 2 tsp. Olive oil
- 2 Tbsp. Garlic, minced
- 1/4 c. Yellow onion
- 1 Tbsp. Kosher salt
- 2, 15.5oz cans, Cannellini beans, drained
- 1 1/2 c. Vegetable broth, unsalted
- 1/2 c. Nutritional yeast
- 1/2 c. Sun dried tomatoes, chopped
- 4 c. Spinach
- 2 Tbsp. Lemon juice
- 1 tsp. Red chili flakes
- 1 tsp. Basil, chopped
- 1 tsp. Lemon zest
How to Make:
Step 1.
Bring a large pot of lightly salted water to a boil, then cook the pasta according to package directions. Reserve.
Step 2.
In a large stock pot heat the olive oil. Add the onions and sauté for 1 minute or until translucent.
Step 3.
Add cannellini beans and garlic, then stir to combine. Sauté for 1 minute and then add nutritional yeast and vegetable broth.
Step 4.
Bring the beans to a simmer then remove from heat and transfer to a blender. Blend until smooth.
Step 5.
Transfer sauce to a stock pot then add the cooked pasta, sundried tomatoes, spinach, lemon juice, and red chili flakes. Add 2 cups of water and cook on medium heat to reduce the liquid by 1/3, this takes approximately 10 minutes. Stir to combine.
Step 6.
Garnish with basil and lemon zest. Enjoy!
