"Lightened Up" Fettuccine Alfredo

Ingredients:
- 12 oz. GoodWheat Fettuccine
- 1 Tbsp. olive oil
- 2 Tbsp. garlic, minced
- 3 Tbsp. all-purpose flour
- 1 c. vegetable stock
- 1 c. low-fat milk
- 1 c. Parmesan cheese
- 1 Tbsp. Kosher salt
- 1 tsp. black pepper
- 1 1/2 tsp. lemon juice
- 1/4 c. parsley, chopped
How to Make:
Step 1.
- Cook pasta according to package directions.
Step 2.
- In a large saucepan, heat olive oil over medium heat and sweat garlic until aromatic, about one minute.
Step 3.
- Stir in flour and cook an additional minute. Whisk in vegetable stock until smooth.
Step 4.
- Whisk in milk and bring to a simmer. Cook until slightly thickened.
Step 5.
- Stir in ¾ C parmesan cheese, kosher salt, black pepper, and lemon juice.
Step 6.
- Combine pasta with garlic alfredo sauce. Toss to combine.
Step 7.
- Plate. Garnish with remaining parmesan cheese, parsley, and fresh cracked black pepper.
