Ingredients:

Garlic Lemon Dressing

  • 1/3 c. Olive oil                  
  • ¼ c. Lemon juice                              
  • 1 tsp. Dijon mustard        
  • 1 Tbsp. Garlic, jarred, minced                     
  • 1 Tbsp. Honey                   
  • ½ tsp. Kosher salt                            
  • ¼ tsp. Black pepper                         

Pasta Salad

  • 6oz GoodWheat Rotini Pasta, dry                             
  • 1 c. Cucumber, English, diced                     
  • 1 c. Cherry tomatoes, halved                      
  • ½ c. Red onion, diced                     
  • ¼ c. Kalamata olives, pitted, sliced            
  • 3oz Hard salami, chopped                            
  • 4oz Feta cheese, crumbled                          
  • ¼ c. Parsley, chopped                     
  • ½ tsp. Kosher salt                            
  • ¼ tsp. Black pepper, ground

How to Make:

Step 1.

Cook pasta according to packaging instructions until al dente. Drain and rinse under cold water. Set aside.

Step 2.

In a medium-sized bowl, add garlic lemon dressing ingredients and whisk together vigorously until emulsified.

Step 3. 

In a large bowl add all ingredients together and stir to combine.
