Ingredients:
Garlic Lemon Dressing
- 1/3 c. Olive oil
- ¼ c. Lemon juice
- 1 tsp. Dijon mustard
- 1 Tbsp. Garlic, jarred, minced
- 1 Tbsp. Honey
- ½ tsp. Kosher salt
- ¼ tsp. Black pepper
Pasta Salad
- 6oz GoodWheat Rotini Pasta, dry
- 1 c. Cucumber, English, diced
- 1 c. Cherry tomatoes, halved
- ½ c. Red onion, diced
- ¼ c. Kalamata olives, pitted, sliced
- 3oz Hard salami, chopped
- 4oz Feta cheese, crumbled
- ¼ c. Parsley, chopped
- ½ tsp. Kosher salt
- ¼ tsp. Black pepper, ground
How to Make:
Step 1.
Cook pasta according to packaging instructions until al dente. Drain and rinse under cold water. Set aside.
Step 2.
In a medium-sized bowl, add garlic lemon dressing ingredients and whisk together vigorously until emulsified.
Step 3.
In a large bowl add all ingredients together and stir to combine.
