Sautéed Mushroom & Caramelized Onion Rotini

Ingredients:
- 6 oz. GoodWheat Rotini
- 4 Tbsp. Extra virgin olive oil
- 16 oz. buttom mushrooms
- 1 c. yellow onion
- 2 Tbsp. garlic, minced
- 1 c. white wine
- 1 Tbsp. Dijon mustard
- 1 tsp. red pepper flakes
- 8 Tbsp. butter, cubed
- 1 Tbsp. lemon juice
- 2 tsp. sage, chopped
- 1 tsp. thyme, chopped
- 1/4 c. Parmesan cheese, grated
How to Make:
Step 1.
- Boil a large pot of water.
Step 2.
- In a large sauté pan, heat 2 Tablespoons of olive oil over medium high heat. Add button mushrooms and sauté until golden brown. Remove from pan.
Step 3.
- In the same pan, add sliced onions and caramelize over medium heat. Add garlic and cook until aromatic, about one minute.
Step 4.
- Add white wine and deglaze pan, scraping bottom with a wooden spoon. Add mustard and red pepper flakes and reduce by half under medium heat.
Step 5.
- Add butter and emulsify with sauce. Finish with lemon juice, sage, and thyme. Return mushrooms to sauce.
- Cook pasta according to box instructions. Combine with sauce.
Step 6.
- Plate. Garnish with sage and shaved parmesan.
