Ingredients:

  • 6 oz. GoodWheat Rotini
  • 4 Tbsp. Extra virgin olive oil
  • 16 oz. buttom mushrooms
  • 1 c. yellow onion 
  • 2 Tbsp. garlic, minced
  • 1 c. white wine
  • 1 Tbsp. Dijon mustard
  • 1 tsp. red pepper flakes
  • 8 Tbsp. butter, cubed
  • 1 Tbsp. lemon juice
  • 2 tsp. sage, chopped
  • 1 tsp. thyme, chopped
  • 1/4 c. Parmesan cheese, grated

How to Make:

Step 1.

  • Boil a large pot of water.

Step 2.

  • In a large sauté pan, heat 2 Tablespoons of olive oil over medium high heat. Add button mushrooms and sauté until golden brown. Remove from pan.

Step 3.

  • In the same pan, add sliced onions and caramelize over medium heat. Add garlic and cook until aromatic, about one minute.

Step 4.

  • Add white wine and deglaze pan, scraping bottom with a wooden spoon. Add mustard and red pepper flakes and reduce by half under medium heat. 

Step 5.

  • Add butter and emulsify with sauce. Finish with lemon juice, sage, and thyme. Return mushrooms to sauce.
  • Cook pasta according to box instructions. Combine with sauce. 

Step 6.

  • Plate. Garnish with sage and shaved parmesan.
