Ingredients:
Chipotle Garlic Dressing
- 1/2 c. Greek Yogurt or light sour cream
- 2 Tbsp. Chipotle peppers in adobo sauce, chopped
- 1 clove garlic, grated
- 1 Tbsp. honey
- 1 Tbsp. Lime juice
- 1/2 tsp. Kosher salt
- 1/4 tsp. Black pepper, ground
Pasta
- 6 oz GoodWheat Rotini Pasta, dry
- 1 c. Red onions, diced
- 1/2 c. Jalapeño pepper, diced
- 1 c. corn, roasted
- 1 c. cherry tomatoes, quartered
- 1 c. black beans, canned, drained, rinsed
- 1 ea. avocado, diced
- 1/2 c. cilantro, chopped
- 4 oz. Cotija or Queso Fresco cheese, crumbled
How to Make:
Step 1.
- In a medium-sized bowl, add all ingredients for chipotle garlic dressing and whisk to combine.
Step 2.
- Cook rotini pasta according to packaigng instructions until al dente. Drain and rinse under cold water. Set aside.
Step 3.
- In a large bowl, combine all ingredients together and stir to combine.
