Ingredients:

 Chipotle Garlic Dressing

  • 1/2 c. Greek Yogurt or light sour cream
  • 2 Tbsp. Chipotle peppers in adobo sauce, chopped
  • 1 clove garlic, grated
  • 1 Tbsp. honey
  • 1 Tbsp. Lime juice
  • 1/2 tsp. Kosher salt
  • 1/4 tsp. Black pepper, ground

Pasta

  • 6 oz GoodWheat Rotini Pasta, dry
  • 1 c. Red onions, diced
  • 1/2 c. Jalapeño pepper, diced
  • 1 c. corn, roasted
  • 1 c. cherry tomatoes, quartered
  • 1 c. black beans, canned, drained, rinsed
  • 1 ea. avocado, diced
  • 1/2 c. cilantro, chopped
  • 4 oz. Cotija or Queso Fresco cheese, crumbled

How to Make:

Step 1.

  • In a medium-sized bowl, add all ingredients for chipotle garlic dressing and whisk to combine.

Step 2.

  • Cook rotini pasta according to packaigng instructions until al dente. Drain and rinse under cold water. Set aside.

Step 3.

  • In a large bowl, combine all ingredients together and stir to combine.
